Combine bread crumbs and Parmesan cheese in a shallow dish. Brush eggplant slices with melted butter; coat each side with bread crumb mixture. Arrange on a lightly greased baking sheet. Bake, uncovered, at 425 degrees for 15 minutes, or until tender, turning once. Sprinkle eggplant slices evenly with mozzarella cheese. Meanwhile, combine tomatoes with juice, tomato sauce and seasonings in a small saucepan. Bring to a boil over medium-high heat. Reduce heat to medium-low. Simmer 10 minutes, or until slightly thickened. To serve, divide sauce among 4 plates; top with eggplant slices. Serve with cooked spaghetti, if desired. Serves 4 to 6.
